If you're like me, spare time is hard to come by. I used to bake all the time. I still love it, but I'm always on the lookout for a quick fix, especially in the chocolate category. Did I mention I'm a chocoholic? Molten Lava Cakes always hit the spot...
These are SO quick and easy, you won't believe it. Here's what you'll need (seriously, this is it!).
6 oz. Bittersweet Chocolate (I was out so I used a Ghirardelli bar I had on hand)
10 Tbsp of butter
1-1/2 Cups Powdered Sugar
1/2 Cup Flour
3 Whole Eggs
3 Egg Yolks
Oven set to 425F (200C or just above gas mark 6 for my UK fam & friends), put your chopped up chocolate and butter into a bowl and zap it for about 2 min. or until the butter has melted. Stir until the chocolate is completely melted. Add powdered sugar and flour until you have this thick concoction.
Swap your stiring device for a wire whisk and stir the whole eggs and yolks in until its well mixed and gooey like so...
Pour it into some well greased up ramekins or souffle dishes, pop them onto a baking sheet and put them in the oven for 14-15 minutes until the tops puff up and crack (edges firm, center gooey). They'll look like this when they are done. Give them a minute or two to cool.
Loosen the edges with a knife and drop them onto a plate. Add a sprinkle of powdered sugar or a dollop of ice cream and enjoy! Mmmmm
