Valentine Mini Cheesecake (with Cherry on Top)

Some of the best recipes are the ones scribbled down from your Mom's memory.  This is a simple dessert perfect for Valentine's Day.  Who can resist a cherry on top?

My wonderful mother (who just had a birthday, Happy Birthday Mom!), passed this recipe on to me years ago.  Like everything she made for us, it was filled with love.

Here's what you'll need:

2 packages of cream cheese (room temp)
1 cup  'o sugar
1 tsp of of vanilla
2 eggs
Vanilla wafer cookies
1 can of cherry or strawberry pie filling
A pinch of love


Heat the oven up to 350F (180C or gas mark 4) and line a muffin tin with paper liners.

Beat the cream cheese with a mixer until it is fluffy.  Then add the sugar and vanilla...mix well.  Add the eggs and mix well.




Place a vanilla wafer in the bottom of each liner.  Fill each liner with your cream cheese mixture (should fill about 12 liners 3/4 of the way full).  Then bake for about 22-23 minutes.


After they have cooled down spoon your topping of choice onto each one.  I like my cheesecake cool so I keep them in the fridge.  Serve up to someone you love, or snarf them all by yourself while watching reruns of Sex and the City (I've been there too).
