Easter Leftovers : Ham, Spinach & Cheddar Quiche

Another Easter has come and gone and here we are complaining about how we ate too much again. And then there's the leftover ham. A quick solution for getting rid of the leftover Easter ham? Quiche!



Quiche, beans and sausage is another one of those British cuisine staples that I've happily adopted as one of my own.

The Brits put America's pork sausages to shame. So I've left the 'bangers' out for a lighter meal of just quiche and beans. A perfect pairing for breakfast, lunch or dinner once you've recovered from your Easter food binge.

// Here is your list of ingredients, most of which you'll probably have on hand.

- Left over ham cut into chunks
- Spinach chopped up
- Cheddar (the sharper and more European the better), shredded
- 3/4 C Whipping cream
- 3 Eggs
- Salt/Pepper to taste
- Garlic (my secret ingredient) or garlic powder
- Pie crust, pre-made
- A can of Heinz Baked Beans


Preheat the oven to 375F (190C or Gas Mark #5).

Thaw your pie crust and fit it to a pie pan if necessary, or if you're like me, just use the Pilsbury one that comes in tin.

Meanwhile, chop up your spinach and ham and shred the cheddar. No precise measurements here. Use as much or as little as you like just don't let the mixture overflow from the pie pan.

Once thawed poke holes (with a fork) every few inches into the bottom of the crust to prevent bubbles during baking.


In a large bowl with a mixer, beat the eggs, cream, salt, pepper and garlic for a minute or two on medium speed. You can either chop and sauté fresh garlic cloves or, if you're in a hurry use a dash of garlic powder. A little goes a long way and makes all the difference in the world on flavor.


Layer your spinach on the bottom of the pie crust followed by the ham and then the cheese spreading evenly.


Then pour your egg mixture over the top giving the pie pan a little shake to distribute the liquid.


Pop in the oven on a cookie sheet for about 35-40 minutes. When you can smell it and the top is firm and golden you'll know it's done. In the meantime you can follow me over at Bloglovin. I love making new friends.


While it's cooling off, heat the beans on the stove. How cute are these tumble trivets E (my husband) gave me for Christmas?! I love a good excuse to toss them on the counter like dice.


Serve together on a warm plate.
