Monster Cookies and Tuna Melts

You're probably thinking, 'Cookies and tuna melts? Odd combo.' Since I can't justify a meal consisting only of these amazing cookies I had to throw something together in order to make it a proper meal which is where the tuna melts come in.

But really I was thinking, 'hurry up and finish the sandwich before the cookies go cold!' So let's start there, because really, that's why you stopped by right? For a closer look at these bad boys...

Okay you really shouldn't be licking your screen. I'm pretty sure that will void the warranty on your computer or mobile device.

These are insanely easy to make. As are most things on my Pinterest drool board.

Sally's Baking Addiction is the mastermind behind these super soft, lovely chunks of heaven.

// Soft Monster Cookies //

1/2 cup or 1 stick of butter (at room temperature)
1/2 cup brown sugar
1/4 cup white sugar
3/4 cup creamy peanut butter
1 egg
1 teaspoon vanilla
1/2 teaspoon baking soda
1 1/4 cups all purpose flour
1/2 cup quick cooking oats
3/4 cup m&ms
1/4 cup chocolate chips
1/4 peanut butter chips 

Preheat the oven to 350 degrees F.  

Mix the butter, brown and white sugars in a large bowl using a hand/stand mixer.  Add the peanut butter, and stir.  Add the egg, stir, vanilla stir.  

Measure in the baking soda and flour and stir just until combined.  Stir in the oats, m&ms, chocolate chips and peanut butter chips.  


Scoop cookie balls on to a sheet lined with a Silpat mat or sprayed with cooking spray.  Press down gently as they do not spread on their own.  


Bake for 9-10 minutes but no longer.  You want these to stay soft.  Remove from the oven and let cool on the cookie sheet for 2-3 minutes then move to a cooling rack.  

As for the obligatory 'proper' part of my meal, that was another Pinterest find. I think the French Bread and smoked Provolone really make it. Still boring in comparison to the cookies.
