4 Easy Girl's Night Recipes

While the guys are away playing cards,
the girl's will gather and drink hard (liquor).

Here are some of my favorite, easy recipes for nibbles to balance out all of those drinks.



Always one for a good dessert, I'll start from the chocolate and work my way backwards. It doesn't get much easier than these bad boys...



1  // Chocolate Covered Peanut Butter/Granola Apple Slices


Phew, that's a mouthful. A mouthful of yum. You could almost fool yourself into thinking that these apples are 'healthy'. Here's what you'll need

- 2-3 Red Apples of a sweet variety
- Peanut butter
- Granola (I used Special K)
- 1 C Semi Sweet Chocolate Chips
- 2/3 C Heavy Whipping Cream
- 2 Tbsp Butter (unsalted)
- 1/4 tsp Vanilla

Wash, peel and quarter your apples. To make sure they don't turn brown you'll want to soak them in a bowl of cold water with the juice of 1/2 a lemon for about 5 mins.

Dry off the slices and schmear them with a whalop of PB. Dunk in the granola. Then lay them in rows on a large plate or baking sheet. Pop 'em in the fridge.

You can either make your own chocolate sauce (sooo good), or you can buy pre-made sauce. I like this easy homemade sauce because you can control the consistency by adding more or less cream.

For the chocolate sauce:

Heat the cream on the stove over medium heat until tiny bubbles start to form on the surface. Don't let it boil! Remove from the heat. Add chocolate chips and let them sit for a few seconds before stirring until they are all melted. Stir in the vanilla. Set aside to cool.

After the chocolate sauce has cooled to the right consistency use a whisk or spoon to drizzle the chocolate over the apple slices. Pop them back in the fridge to cool until serving.


Save the remaining chocolate sauce for your....


2 // Chocolate Dipped S'more Bites


Bite sized s'mores. 'Nuf said.


- Jumbo Marshmallows
- Chocolate sauce (see above)
- Graham Crackers

Put a handful of graham crackers in a ziploc bag and take out the frustrations of the week on them with a brutal bashing until all crumbly. I used the underside of a water glass but just about any heavy object will do.

Dunk half of each marshmallow in the chocolate sauce (homemade or store bought...you know my preference...). Then dunk the chocolatey end into the crushed graham crackers. I used Cinnimon flavored crackers and it totally took the s'mores up a notch. Highly recommended.

Set them on a plate chocolate/cracker side up to cool in the fridge until serving.



3 // Seven Layer Dip


Double dunkers need not apply. Everyone get's their own personal serving of 7 Layer Dip in a Cup!


- Ground beef
- Taco seasoning
- Refried Beans
- Guacamole
- Salsa
- Shredded Cheese
- Sour Cream

Brown your beef on the stove and season as instructed on the seasoning packet. Since I only used 1/4 pound of beef for 3-4 people, I reduced the amount of seasoning.

For the guacamole, I used two avocados, mashed up and simply seasoned with salt, pepper and (my secret ingredient) a dash of garlic powder. Store bought guac is fine too.

Layer ingredients in your serving cups as follows: refried beans, beef (stop! heat in microwave for a minute or two), then add salsa, guacamole, cheese, sour cream and garnish with a few tomato chunks.

I served mine in low ball drinking glasses, but any small dish will work. You can also leave the beef out and go with vegetarian refried beans for a vegetarian version.


Serve with tortilla chips.


4 // Caprese Bites


Probably the world's easiest and cutest little snacks and 100% guilt free.


- Package of cherry tomatoes
- Mozerella cheese (I used the pearls)
- Fresh Basil Leaves
- Toothpicks

Wash and halve your cherry toms. Spear half of the cherry tom followed by a mozzarella ball, the other half of the tomato and top with a little basil leaf. Done!


Refrigerate until serving.



Add copious amounts of liquor, a chick flick (we had selected Eat, Pray, Love but never got around to watching it) and some comfy PJs.


Eat until stuffed. Drink until drunk. Laugh until you cry. And chat until you can hardly keep your eyes open!
